The Mexican Feast
For two nights this month, Tom Parker Bowles will be cooking up a serious Mexican feast, joined by renowned Mexican chef Edson Diaz-Fuentes, of Santo Remedio. The six course menu will feature some of Tom’s favourite regional Mexican specialities as well as signature dishes from Edson’s critically acclaimed restaurant, Santo Remedio, which is set to re-open later this year. These will include scallop Aguachile, sucking pig tacos and Ox tongue with Pipian rojo, along with wines, tequila and mescal.
